The brand
Ana María Romero makes Mijenta; three producers appear in its history
Mijenta launched in 2020 with co-founders Mike Dolan, Juan Coronado and Elise Som. Ana María Romero Mena leads its tequila making. Its bottles span three Jalisco producers: Destiladora de los Altos and Casa Tequilera de Arandas, both in Arandas, and JJ Spirit Co in Zapotlanejo. Different releases have used different producers; the NOM history below connects them to the bottles.
The regular range is Blanco, Reposado, Añejo Gran Reserva and Cristalino. Maestra Selection adds releases made from particular agave harvests and with different production methods. Symphony uses barrels built with oak staves from four US states, starting with Cristalino in 2024.
People & company
From wine education to tequila making
Before working in tequila, Romero taught wine seminars and judged wines in Mexico’s Valle de Guadalupe. A tequila tasting she led in Parras in the mid-1990s prompted visits to producers and years of study. She developed an aroma wheel for tequila and wrote Los Aromas del Tequila: El Arte de la Cata. In a 2021 interview with The Tasting Panel, she described wine as the starting point for her sensory training.
Juan Coronado introduced Romero to Mike Dolan in 2018 as the Mijenta team took shape. Her work now runs from selecting agave to developing the range’s blends and maturation choices.

Lighter packaging and support for women’s environmental projects
Altos Planos, Mijenta’s brand company and US importer, is a certified B Corporation. Its 2025/26 impact report describes reducing the glass bottle’s weight from 830 to 680 grams, making labels from agave fibers and repurposed coffee sacks, and replacing glass stoppers with sugar-cane-fiber biopolymer caps. The Blanco and Reposado photographs below show the earlier glass-stopper presentation.
The company also supports Women’s Earth Alliance’s work with women-led organizations in Mexico, including projects in farming, water and local livelihoods. These are concrete parts of the sustainability program led by co-founder Elise Som.

Agave and maturation
The regular range uses different combinations of wood
Mijenta sources mature Azul agave (A. tequilana) from the Jalisco Highlands for its regular range. Reposado spends six to eight months in American oak, cherry and acacia casks. Añejo Gran Reserva matures for about 18 months using American white oak, French oak, acacia and cherry.
Gran Reserva’s batches have used those woods differently. The 2022 launch described transfers between cask types; the 2023 second release described tequila matured separately in the different woods and then blended.
Mijenta Cristalino is a reposado: it spends about eight months in Symphony barrels assembled from oak staves from Minnesota, Missouri, Pennsylvania and Virginia. Charcoal filtration then removes the color. Read how cristalino filtration works.
Maestra No. 3 uses stone, wood, copper and clay
Maestra Selection No. 3 uses eight-year-old, seed-grown agaves from Jamay, in Jalisco’s Ciénega region beside Lake Chapala. The agaves are cooked in a volcanic-stone oven and crushed with a tahona, a large stone wheel. Both use stone from Popocatépetl. Fermentation takes place in wooden tanks with the agave fibers, followed by copper-pot distillation and 15 days resting in clay pots before bottling at 50% ABV.
The Maestra guide explains seed-grown agave and the differences between all three editions. For an earlier resting method, a January/February 2021 account in The Tasting Panel described Mijenta Blanco spending 45 days in stainless-steel vats before bottling.
Mijenta’s NOMs connect different releases to different producers
| Producer | Place | Mijenta connections |
|---|---|---|
| Destiladora de los Altos NOM 1412 | Arandas, Jalisco | Earlier Blanco and Reposado; the 2022 Añejo; Maestra Nos. 1 and 2; Symphony Nos. 2 and 3. |
| Casa Tequilera de Arandas NOM 1499 | Arandas, Jalisco | Named in a January/February 2021 Mijenta feature. Current official Blanco and Reposado photographs carry 1499; Cristalino and a newer Añejo also have this association. |
| JJ Spirit Co NOM 1672 | Zapotlanejo, Jalisco | Maestra Selection No. 3, released in September 2026. |
Casa Tequilera de Arandas was already involved early in Mijenta’s life: the 2021 feature describes Romero working with its distiller Miriam Lopez Montaño. Later Maestra and Symphony releases still carry NOM 1412. The producer history therefore overlaps across expressions.
In his February 2026 Drinkhacker review, Christopher Null reported that Añejo production had moved from NOM 1412 to 1499 in late 2025. He found his newer sample spicier and more herbaceous, with coconut and chocolate notes, compared with the 1412 bottle he reviewed in 2022. That is a comparison of two tasted releases; the exact changeover dates for every Mijenta expression remain unclear.
Producer names and historical records
Earlier CRT records also list Joaquín Robles Robles at NOM 1672, with the same address as JJ Spirit Co. The October 2026 register uses JJ Spirit Co. These are producer-name records at one NOM. The NOM printed on a bottle is the useful starting point for tracing that release.

US bottle and bar prices
Mijenta prices depend on the expression
The October 2026 US observations put Blanco around $40, Reposado $60, Cristalino $100, Añejo Gran Reserva $150 and Symphony No. 3 $115 per 750 mL. Maestra No. 3’s $100 official listing was sold out.
The more expensive bottles bring different maturation and production choices: Cristalino uses the four-state oak-stave barrels and filtration, while Gran Reserva uses four woods over about 18 months. Mijenta announced Gran Reserva at $199 for its 2022 US launch and Cristalino at about $120 in 2024. Those dated launch prices differ from the observed shop prices below.
